Delilah like most kids LOVES chicken nuggets and is always asking for them. I have attempted baked nuggets in the past a few times but they never passed the Delilah test, these however passed with out hesitation.
Slice the chicken into "nuggets". I find the easiest way to cut chicken into smaller slices is to have it slightly frozen.
Coat the nuggets in flour. This will help the egg wash to stick, which in turn will help the breading stick. I layer a bunch in a single layer then shake the flour on then shake the excess off for a light coating.
Dip the flour coated chicken into the eggs. (This is two eggs with about 1/8th a cup of water mixed until fluffy. )
Coat the chicken in a corn flake mixture.
2 cups cornflakes (crush in food processor)
1 teaspoon salt
1/2 teaspoon pepper, onion salt, garlic powder, and mustard powder
line a baking sheet with tin foil, putting a baking rack on top of the foil. Spray the rack with cooking spray, place the chicken on then spray the chicken lightly.
bake at 375 degrees for 8-10 minutes no need to flip.
To freeze them: After they have cooled put them on a lined baking sheet in a single flat layer. Place them in the freezer for 2 or so hours. After they have frozen solid put them in a resealable bag for quick access. (half of these are coated with Italian bread crumbs, Delilah didn't like those as much)
To reheat them I microwaved them for 15-20 seconds depending on the quantity and the size of them.
And if your kid so feels the need you are welcome to dip them in ketchup.
